Chef de Partie

An exciting opportunity for a Chef de Partie to work in this well-established country house 4 star hotel on the outskirts of Southampton, Hampshire has arisen, following refurbishment of our restaurant, ‘Hampshire’s’.

Consistently recommended for our fine dining, quality of food and outstanding service we are now looking for an additional member to join our team as a Chef de Partie.

In this role you will be in charge of one or more kitchen areas, depending on the structure of the department. You must supervise and create culinary dishes, providing support for the Head Chef and the Sous Chef. You will have bags of stamina and enjoy the fast pace of working in a kitchen. You also need to be able to stay calm and work as part of a team during a frenetic service.
Key responsibilities:

Preparing, cooking and presenting dishes within your specialty
Managing and training any demi-chef de parties or commis working with you
Helping the sous chef and head chef as required
Prepare culinary dishes in line with technical instructions
Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety
Monitoring portion and waste control to maintain profit margins

Previous experience of working in a four star, rosette awarded hotel restaurant and in banqueting is desirable, but not essential as training will be given to the right candidate.

You will be working a 5 day week, straight shifts.

Uniform is provided.
